A work entry made with no signal is stored on the device first. When the phone reconnects, it uploads. The server assigns the recorded time from when the entry was accepted, not from whatever clock the phone was showing.
If someone else already updated that log on the server, the server version wins. Check the timeline after you are back online before you lock the day.
